Halloween Ghost Coconut Balls

These adorable coconut ghosts are an easy, healthy, gluten-free, and vegan treat for your Halloween festivities!

Ingredients

  • 2 cups shredded coconut plus extra for coating
  • 2 cups cooked millet or quinoa
  • 4-6 tbsp agave syrup or honey (or dates, adjusting quantity based on desired sweetness)
  • A few drops vanilla extract
  • 20 -30 almonds or hazelnuts optional
  • melted dark chocolate for decorating faces

Instructions

Prepare the Coconut Mixture:

  • Place the shredded coconut in a blender and blend until it becomes creamy and smooth, scrape down the sides of the bowl as needed. Add the cooked millet or quinoa, sweetener (adjusting dates for desired sweetness), and vanilla extract. Blend until smooth. Chill in the fridge for 15 minutes.

Form the Ghost Shapes:

  • To make ghost shapes, scoop about 1 tablespoon of the mixture, flatten slightly, and add an almond or hazelnut in the center (optional). Shape the mixture into a teardrop form with a pointed top, resembling a ghost. Roll each ghost in shredded coconut to coat.

Decorate the Faces:

  • Use melted dark chocolate to draw eyes and a smile on each ghost.

Chill:

  • Place the ghost-shaped coconut balls in the fridge for at least 2 hours to set.
