Chop the spinach and mix it with sour cream. Season the filling to taste with garlic powder, pepper, and salt. Mix in grated parmesan or cheese.
Set aside about 1/8 of the pizza dough. Roll out the remaining dough into a rectangle (or simply unfold it), spread it with the spinach filling, and roll it up.
Roll it in such a way that you get a shorter and thicker log.
Cut the log into slices about 1.5 cm – 2 cm thick and place them on baking paper. From the reserved dough, shape 5 smaller balls for each slice to form the turtle's legs and head, and attach them to the slice to create the shape of a turtle.
Add whole peppercorns for the eyes and pumpkin seeds for the tail.
Brush the turtles with beaten egg.
Bake them for about 12 - 15 minutes at 200°C (392°F) or until nicely golden.
